The lean meat paradox

The lean meat paradox is about how we must take a Leap of Faith and eat more fat. How the lack of fat can keep us in sugar-burning mode, even though we don't eat carbohydrates, and thus an explanation for many of why we don't really get "over the knee" and into deep, good, and high-functioning ketosis.

The paradox of lean proteins like chicken breast and white fish, actually super healthy products, is that they can actually be a metabolic trap if you're not careful.

You'd think that eating only animal protein would turn you into an invincible carnivore, a fat-burning machine. But if you strip away the fat and stick with only lean meat, you can end up in a metabolic quagmire—never fully fat-adapted, but never on a stable glucose path either.

You are in limbo between both of them.

We can call this the lean meat paradox, and with this knowledge, you may be able to get over a slump and into this wonderful state of ketosis that we hear so much about, but haven't quite experienced ourselves.

Is it also conceivable that many athletes and bodybuilders have fallen into this trap, and that is why they cannot return to their maximum level, and to development, on carnivore?

The Randle Cycle: A tug-of-war between sugar and fat

Let's start with the basis of this paradox: The Randle cycle, also known as the glucose-fatty acid cycle. This mechanism controls whether your body burns fat or glucose, depending on what is available. This is not about burning in the sense of losing weight, but about how the body switches between different types of fuel, based on what is available. For a fuel we MUST have, and quite a lot of it every single day.

When glucose dominates, insulin is high, and fat burning is suppressed. Insulin is in place to direct blood sugar into cells for energy, but also into fat cells to store energy for later.

When fat dominates, the opposite of insulin is, glucagon, high. Unlike the anabolic hormone insulin, glucagon is catabolic – meaning it eats itself. Glucagon breaks down fat cells so that they can be used as energy for us.

And here comes the problem:

If you only eat lean meat and don't have access to enough fat for fuel, your body is forced into a glucose-dependent state, even without eating carbohydrates..

How Lean Keeps You From Burning Sugar

Gluconeogenesis takes over

Protein is not an efficient direct source of energy, and the body prefers fatty acids and glucose. However, it can use protein for energy if neither fat nor sugar is available.

Then we convert protein into glucose through a process called gluconeogenesis (GNG) to meet our energy needs. Protein can be turned into sugar, but it cannot be turned into fat. So fat is essential for survival; it must be supplied from outside, or be available in a stored form.

The result when fat is not available, and we also do not eat carbohydrates, is chronic glucose production, increased insulin response and limited fat burning.

You are still in a state of high insulin, which as mentioned prevents fat burning, and you live off sugar energy, just like when we ate carbohydrates – just in a very inefficient way.

If you don't eat fat, your liver won't produce enough ketones, if at all, which are essential for brain function, endurance, and steady energy.

  • You'll never get over the knee and into keto euphoria.
  • Your energy is unstable, with fluctuations throughout the day
  • You are unable to burn body fat
  • You lose courage, and faith in carnivore

Rabbit Starvation

Too much protein without fat is not just a metabolic blunder – in the long run it can actually be downright life-threatening. Fortunately, the body is so powerful that we are unlikely to be able to endure ending up there, but this is important to understand in order to get out of a pit where you work hard with your carnivore diet, but don't see or feel the results you hear others have.

Early hunters and nomads knew from experience that fat was vital, and that if they only managed to catch lean animals, such as rabbits, they would not be able to survive.

They called this rabbit starvation.

Symptoms include:

  • Diarrhea and stomach problems
  • Extreme hunger, even though you are eating
  • Fatigue, tiredness, and brain fog
  • You're freezing even though the temperature is actually decent
  • You lose muscle mass and strength and your organs shrink.
  • Nausea, apathy, and in extreme cases, death

The body can't burn unlimited protein for fuel. You need fat, or you'll get sick.

Unstable energy and blood sugar chaos

Gluconeogenesis is demand-driven, meaning it produces glucose as your body needs it. But this can lead to energy crashes, where you experience:

  • Irritation and fatigue.
  • Perpetual appetite, even after a large meal.
  • Never a feeling of real satiety.

Unlike a fat-fueled metabolism, where steady energy and stable blood sugar dominate, you get stuck in carbohydrate-like blood sugar swings.

Loss of metabolic flexibility

An optimally fat-adapted person should be able to switch between fat and glucose burning without any problems. However, if your body is locked into protein-driven glucose production, you will never achieve:

  • The ability to go long periods without food.
  • Effective fat burning.
  • Clear and stable mental energy.

The Solution: Eat Fat Like a Predator

The only way to escape the lean meat paradox is to eat enough fat. The human body is designed to function on fat and protein together, not protein alone.

The ideal macro distribution for a fat-adapted state is 70-80% fat and 20-30% protein measured in calories. This is often a bit misunderstood. Since fat has 9 calories per gram, and protein has 4 calories per gram, this means that a half-and-half diet can be a good fit. By alternating between different rich foods, and eating all the fat that comes with it, you usually end up with a good ratio of fat to protein without having to eat buckets of butter.

Because you can also eat too much fat, and the excess can be wasted by the body, such as making you feel very hot, spontaneously wanting to invent things, and you can simply pee the energy out, or exhale it.

But the body can also store it, so a balance is important. If you have been living in a calorie deficit for a long time due to traditional dieting, your body has to get used to the new energy. You may therefore gain weight in the beginning.

Best sources of fat to break free from the trap

  • Fatty cuts of meat – Ribeye, brisket, lamb shoulder, pork ribs.
  • Animal fat – Tallow, lard, butter, ghee.
  • Egg yolks – Perfect blend of fat and protein.
  • Fatty fish – Salmon, mackerel, herring.
  • Offal – Liver, bone marrow, kidney fat (suet).

When you increase your fat intake, the magic happens:

  • Ketones provide fuel for the brain and muscles.
  • Fat burning becomes dominant, and energy remains stable.
  • Insulin remains low, preventing metabolic crashes.
  • Hunger disappears, and true satiety takes over.

Conclusion: Embrace the fat

The lean meat paradox is one of the most important metabolic lessons a carnivore can learn. Protein alone is not enough. Without fat, your body breaks down, and you lose the huge benefits of a fat-focused metabolism.

So throw out the chicken breast, ditch the lean steak, and pour butter on your meat! That's how you unlock real energy, strength, and health.
